Like an Eggplant Parmesan, I breaded and sauteed the Zucchini wedges first.
After I breaded and sauteed robust Zucchini instead. Then I layered then bottom to top with 0nion, breaded-Zucchini, Spinach, sauteed-Portobello Mushrooms, Spinach, breaded-Zucchini. I places tomato sauce and cheese between all the layers. Baked the whole for 60 minutes at 325˚ degrees. I don't know what to call it, but it is delicious!
