Gallo Pinto, ¡Que Rico!

Made Gallo Pinto this week for a side and I swear, it's a dinner on its own!

Cook up some diced bacon, 2 or 3 slices.

Add: diced Red Pepper and Onion (1/2 cup each) and sauté for about 2 minutes.  

Add 2 cups cooked rice and one 8 oz. can of black beans and mix and cook on med-low thoroughly.  Simmer for a couple of minutes.  Toss in a quarter cup of chopped Cilantro.  

Yum-itty-yum-yum-yum.
