Shrimp Primavera with Alfredo Sauce on Pappardelle

 INGREDIENTS:

  • Shrimp (remove the shell)
  • Chicken Stock
  • Pappardella 
  • Carrots
  • Oyster Mushrooms
  • Scallions
  • Parsley
  • Asparagus
  • Pancetta
  • Butter
  • Salt
  • Black Pepper
  • Alfredo Sauce

 Prep the veggies.
 Start by cooking the Pancetta
 Stir in the carrots and simmer 30 seconds and then the mushrooms with a table spoon of butter.
 Continue to cook and stir.
 Next add the shrimp.
 Add some chicken stock to allow for a steam to cook the shrimp, maybe a quarter cup.
 Then the parsley and scallions.
 Keep stirring and cooking
 Lastly add the asparagus, stir and cook 30 seconds to a minute.  Cover and turn off the heat and let steam for 2 minutes.
 Lastly add the Alfredo sauce and serve on pappardelle with freshly ground black pepper and shaved parmesan.
