My dear friend at school shared her New Year's resolution with me: She wants to eat more vegetables. How perfect is that? And so I went home and made a Florentine Vegetable Soup for dinner.
A broth of Chicken Stock
Onion
Baby Portobello Mushroom
Carrot
Celery
Zucchini
Broccoli
Asparagus
and some Orzo Pasta for good measure.
Served with medallions from a good Baguette buttered.
