Nothing says Summer like Gazpacho! ¿Verdad?
Assemble the ingredients.
1.5 lbs Tomatoes, quartered
2 slices of Onion, sliced and submerged in cold water with a little vinegar
2 stalks of Celery, chopped
1 large English Cucumber, peeled and chopped
2 small/mediumish Carrots, peeled and chopped
3 Limes, juiced
1 Red Pepper, chopped
1 small Jalapeño Pepper, chopped
2 cloves Garlic, chopped
A pinch of fresh Cilantro
.5 tsp Basil
Salt
Black Pepper
2 Tbsp Cooking Sherry
2 Tbsp Extra Virgin Olive Oil
.5 C cold Water
Prepare the ingredients. Get out your blender.
1) first slice and cover the onion with cold water and vinegar while preparing the over vegetables. 2) In two turns liquify all the vegetables half of each in each batch. Divided the water, sherry, and olive oil in both mixtures. 3) Combine both batches and chill for at least 2 hours before serving. 4) Garnish with Cucumber cubes and shredded Cilantro.
Served with Napa Cabbage and Apple Slaw.
