When Is Soup Not Perfect?

For a Winter Sunday?
 Of course, it must simmer for hours.  That goes without saying.  I started this one with water, concentrated chicken stock and freshly fried pancetta (meat bits and fat), salt, black pepper, and oregano.  Added: scallions & an onion, carrots, mushrooms, green beans, white navy beans, rice, tomatoes, green pepper, celery and a little Sriracha sauce.
Enjoyed it for the first time after buying a fresh loaf of olive bread from the Farmer's Market and making a grilled cheese sandwich to go with it!  Shear perfection for a cold, damp winter's Sunday.
