BUTTERMILK PEAR PIE

1) Cream together 1.5 cups of organic cane sugar with 1 stick of unsalted butter. 
2) Add 3 Tbsp of unbleached flower and mix well. 
3) Add in 3 eggs and 1 tsp of vanilla with a pinch of salt and mix. 
4) Add 1 cup buttermilk and stir well.

Separately, slice 1 Bartlett Pear into 20 wedges and blanch for 60 seconds in low boiling water. Drain through a colander and rinse with cold water.

In a 9" pie shell arrange pear wedges like a fan, 5 slices per quadrant. Pour liquid mixture over pears. Sprinkle with ground nutmeg. Bake in a 350˚ oven until set, 60-65 minutes. Tooth pick test it.

When it bakes it forms 3 layers: a custard layer on the bottom, a fruit layer in the middle, and a moist cake-like layer on the top. It's a home run every time!
