Amazing Ham Salad

It's Ham Salad, so the key is in the HAM!  Pick a good one.  I go to my local German Deli and get a really nice thick slab of their Black Forest Ham.  The only better option is if you have access to a seriously good County Cured Ham.


1/2 Onion
1 stalk and heart spears of a bunch of Celery
1/4 Red Pepper
1 small or 1/2 a medium Carrot
12 small Sweet Pickles
3/4 lb of good Ham

Chop all up first and add to a food processor and mix to chop further.  Add enough Mayonnaise to bind and bring to the consistency you want.  I served on little pumpernickel bread with fresh cucumber slices and a cured Mediterranean Olive on top.  Festive and delicious!
