This is an easy meal that relies on timing.
First, wash and toss some New Potatoes in a little Olive Oil with six large fresh Garlic Cloves peeled and cut in half. Place in a baking dish covered and bake at 350˚ for 60 minutes.
Next, peel and slice a good sized Onion into wedges from top to bottom and start sautéing with a little more Olive Oil. Add the Shredded Beef. Cook and brown. Add 8 oz pkg of Button or Baby Portobello Mushrooms washed and sliced into disks top to bottom. Cover and simmer for as long as the potatoes have to cook.
Lastly, set up a pot of Salted water and cut a head of Broccoli into spears. Time it so you can blanch them at the very end. I like my Broccoli bright and just on the edge of tender, about 2 minutes in the boiling water, but honestly I tell they're ready by the smell. With a little practice, you will be able to, too.
Return to the Shredded Beef at the end and add in a pkg of Brown Gravy mix to take advantage of the juices--and you may need to add a little water as it cooks depending on tight the lid you're using is.
