When I buy a roasted chicken, ain't no way I can eat it, so I usually dine on the dark meat, and then use the white meat in some other way. For example:
Chicken Broccoli Hot Dish
1 Onion, diced
1 Red Pepper, chopped small
1 Stalk of celery, diced
2 Chicken Breasts, cubed
2 Bunches of Broccoli, cubed
1.5 cups of Pasta of choice (I used the remnants of ruffles and pinwheels!)
1 package of Sharp Chedder Cheese, shredded
2 cans of condensed Cream of Onion Soup
.5 Cup of Chicken Stock
1) cook and drain pasta. 2) Cube broccoli and blanch for 2 minutes in salted boiled water. 3) Mix cans of condensed soup and chicken stock, then stir in onion, celery and red pepper. 4) Add cheese and mix, add chicken and mix, add Broccoli (after running under cold water to cool) and then the pasta, also cooled. 5) Sprinkle top with more cheese. 6) Bake it in a covered casserole dish @ 325˚ for 40 minutes, then uncover and bake another 8 to 10 minutes.
