Fried Egg Sandwich Magic

This is how my dinner goes on a long day.

I have this idea for something with spinach and artichoke hearts and cheese. So I make this filling with Spinach, Artichoke Hearts, Cream Cheese, freshly grated Asiago Cheese and a little Mayo. Then I fill some pillsbury croissants with them and place them in the oven, but I can't wait!

Therefore, I crack an egg and give the white and yoke a swirl. Heat some olive oil in a little skillet. Add the egg and cook it slowly. When the egg forms a base I add some freshly ground black pepper and a dollop of the spinach/artichoke/cheese filling and cover. When it's done (about the same times as the stuffed croissants) I place it on a potato flour Kaiser Roll, and remove the croissants.
