Rajma Masala Inspired

I took my inspiration from spicy Northern Indian cuisine and used: cardamon, cinnamon, cummin, ginger, chili powder, garlic and tumeric with finely chopped cilantro. This was added after a package of country style pork was cubed and browned and the diced tomatoes and onions and a little salt to taste was all going. I used canned diced tomatoes so along with a can of red kidney beans which I added a little additional water to both of the cans to swish around the remaining ingredients, there was enough moister. Last in were carrots, green peppers and mango. All on low and simmering for a good hour before serving on rice. Quite good given the not really using a recipe creation of it. Sometimes I surprise myself.
