Chose to go for a favorite light creation today. Something that I could nibble on all day. My version of a Salade Nicoise : Romaine Lettuce, Green Beans (a.k.a. Haricot Vert), Avocados, Hard Boiled Eggs, Tuna in the middle that is mixed with diced Red Pepper and chopped Cilantro. Drizzle lite Creamy Caesar Dressing around the outside. Garnish with a little freshly ground Black Pepper and Smoked Paprika.
And made enough extras for some Deviled Eggs!
