Snow Day Breakfast
Simple egg omelet filled a thin slice of sharp cheddar cheese and a good sized dollop of homemade spinach dip made with sour cream, mayonnaise, dill spice, black olives, and chopped spinach. I cooked it over a medium low heat in butter to give it the golden skin and then sprinkled fresh ground black pepper and smoked paprika on top.
